To prepare the recipe for Lomo a la plum you need the following ingredients:
- 1 Piece of pork loin
- 2 cups of red wine vinegar
- 1 glass of orange juice
- Plum passes boned
- Bacon minced into squares and fried (the necessary)
- Garlic salt
- Chicken broth powder
- Pepper
- 1 tablespoon of brown sugar
- 2 tablespoons cornstarch dissolved in water
- 1/2 Cup of pineapple juice
- 1 tablespoon butter
PREPARATION
We take the previously washed piece of loin, make a few cuts to the loin of one cm on all sides, season with the chicken broth, garlic powder and pepper around and inside the holes, fill with the previously fried bacon in squares and plums whole or chopped to your liking.
Once finished filling we put it to seal in a pan on all sides with a little hot oil this will help it to be juicy, after sealing, we put it in a refectory and add the red wine vinegar, the orange juice , a little more garlic and chicken broth powder, cover with plastic wrap and put in the refrigerator overnight or at least 3 hours. After being marinated, we put it in the oven covered with aluminum foil for two or three hours at 400 degrees Celsius, this depends on the oven on your stove, the loin is turned in the middle to make it even,
Once the gravy is finished, we bathe the loin with a few large tablespoons and put the rest in a sauce boat, put it back in the uncovered oven, so that it gilds, once caramelized, it is removed from the oven and we add a little more gravy to it , let it rest covered with aluminum foil, and less hot we slice and arrange in a refractory to serve we accompany with the garnish of your choice, we recommend mashed potatoes and cold soup to accompany
